The "K" Sounds – Kale & Quinoa (keen-wah)

Dinner tonight unfolded with very little effort. A bunch of beautiful fresh local kale, cooked quinoa (video on cooking quinoa to come out soon!), and fresh spicy peanut sauce!

Here is how is happened:

Marinated Kale with Spicy Peanut Sauce

1 bunch kale, washed, spun and stem removed
2 T apple cider vinegar
1 t salt
1/2 cup chopped pepper
1/4 cup grated carrot (finely grated)

Chop the kale; mix together the vinegar and the salt. Put the kale in a non-metalic bowl, pour over the vinegar/salt mixture and work everything together with your hands. Squeeze the kale and move it around to generously blend the vinegar/salt into the kale to allow it to soften the kale. Let sit for 30 minutes.

Make the Spicy Peanut Sauce (below) while the kale marinates. When ready, add the chopped pepper, grated carrots and enough sauce to blend throughout the kale and vegetables. Taste, adjust and devour!

Quinoa & Vegetables

1/2 cup quinoa
1 cup water
1 tomato, diced
3/4 cup cucumber, diced
1-2 t fresh oregano

Rinse and cook the quinoa (see method in Quinoa Salad recipe). Allow to cool to room temperature. Add the tomato, cucumber and oregano. Season lightly with salt and pepper. Fold again.

Enjoy this light and flavorful dish!
